ANTHONY BANEGAS’ cart is a more recent addition to the Portland Mercado, but he brings more than 15 years of culinary experience to his latest project, El Coquí.

Their menu is an homage to the food shacks that hug the Puerto Rican coastline. While packed with intense flavors, dishes like the mofongo, empanadas, and pinchos are unintentionally unassuming and traditionally bring people from all walks of life together. Anthony has memories of eating next to surfers, doctors, and politicians along with other neighborhood kids — and is looking forward to bringing the same sense of community to the Portland Mercado.
