For lifelong chef JOSÉ (LEO) PÉREZ, opening his own restaurant had been a dream since he was in culinary school. After training internationally and working in kitchens from Mexico to Washington, D.C., he is excited that he has the chance to bring Cuban flavors to the Portland Mercado.

He enjoys replicating the Cuban flavors that he became familiar with during school and improvising when native ingredients are hard to come by. Be sure to try José’s special take on the traditional Cubano sandwich, which has been a bestseller since QuéBolá? first opened.
