OMAR SALOMÓN is a serial entrepreneur: he has owned businesses in Mexico City as well as Veracruz and sees business as an adventure. It was no surprise that when there was an opening for a new tenant at the Mercado, he jumped at the chance.

The juices, smoothies, and licuados he serves at Xōcotl are all made with natural or organic ingredients. He insists on not using artificial flavoring. With a wealth of knowledge about the historical significance of fruit to the Aztec, Mayan, Mexican, and immigrant communities in Mexico, Omar brings a new perspective to health food, such as adding chile peppers to smoothies or chapulines to salads.
